Junior Chef de Partie

Salary : £21294/annum
An exciting opportunity for a Junior Chef de Partie has arisen at a luxury 4* Spa Hotel based in Melton Mowbray paying £21,294k, plus around £900 bonus p/annum to be paid quarterly.
Working 5 days out of 7 including weekends / 39 hours a week between 06.00 – 22.00
The purpose of the role is to ensure that the highest standard of cuisine is produced for breakfast, lunch and dinner service in the main restaurant and Hotel bar; producing menu ideas and assisting in the training of junior members of staff and kitchen porters.
The role is varied but will include:
* Assisting with the general running of the department and in the preparation and service of cuisine to the required high standard
* Possessing a thorough knowledge of, and being able to produce and present dietary controlled cuisine following the hotel’s food philosophy; providing a choice f dishes for the individual guests who require special dietary assistance and notifying any relevant departments of the guests needs
* Maintaining a positive attitude and professional manner both in the kitchen and throughout the hotel
* Offering any suggestions that could benefit or improve any operational aspect of the department
* Having a good understanding of the storage and rotation of stock to ensure that wastage is kept to a minimum to aid the department’s budget through efficient use of food stuffs
* Producing and service food in the hotel bar
* Communicating with members of staff through the handover diary making notes of any equipment failure, running down of stock items and any general comments
* Ensuring food preparation is plentiful in order to provide guests with a full choice on the menu at all times
* Ensuring that the kitchen porters are adhering to their job descriptions and holding regular training sessions with them following the cleaning manual
* Ensuring that the daily check sheets and cleaning schedules are used correctly and filled in during each shift
* Possessing a thorough knowledge of all health and safety and hygiene regulations ensuring that the highest standards of cleanliness are enforced throughout the department; attending food hygiene training and refresher training every year
* Ensuring you follow an end of day closing down procedure ensuring everywhere is left safe
You will need to be a driver with access to your own vehicle in order to access the hotel (unless based within Melton centre, or Asfordby in which case you can access the company's transport to and from work).
