The Potters Heron is a beautiful thatched 53-bed hotel situated between Winchester and Southampton. The team love hospitality and their enthusiasm for warm, friendly & knowledgeable service knows no bounds. They have the pleasure of hosting many weddings and other events throughout the year and their guests are at the centre of everything they do.

The opportunity for a Head Chef to join the team has now arisen, to be responsible for the production, preparation and quality of all food services for the hotel, bar and functions.

Key duties and responsibilities

Working alongside the Executive Chef, and reporting to the General Manager, the successful applicant will be responsible for:

General Kitchen & Staff Management

* Ensuring the efficient and smooth running of the kitchen.

* Promoting and maintaining good working relationships throughout the catering team and with all other departments in the hotel especially front of house restaurant staff.

* Carrying out, monitoring and ensuring effective recording of staff training.

* Mentoring and coaching to support the development of all members of the catering team.

* Undertaking induction training for all new staff in the department.

Food Purchasing & Cost Control.

* Ensuring that details of all orders are recorded.

* Keeping stock levels at agreed levels, groceries fresh, frozen products used quickly and rotated in a systematic way.

* Checking deliveries on receipt, returning faulty items, receiving and processing paperwork.

* Effectively rotating stock and assisting in the monthly stocktake.

Quality Control

* Demonstrating and maintaining high standards of cooking to meet and exceed customer expectations.

* Ensuring that high levels of customer service are always maintained.

Menu Planning & Food Production

* Producing and presenting food, keeping abreast of current trends and wherever possible exceeding customer expectations.

* Assisting in planning menus for all customers including events and conference meals considering the varied requirements of organisations and individuals, including special diets.

* Costing all menus and special events requirements using the most up-to-date ingredient costs.

* Managing the production and planning of dishes based on an analysis of customer numbers.

* Minimising wastage at all stages of food production.

* Instilling a culture of essential hygiene practices – leading by example – in cooking and storage of food, and the importance of clean, tidy and hygienic working practices.

Health & Safety

* Monitoring all activities in line with the Hazard Analysis Critical Control Point approach.

* Assisting in the regular review of COSHH and hazard risk assessments.

* Ensuring compliance with all food hygiene regulations are adhered to within the kitchen environment in accordance with Food and Safety (FSA) Regulations.

* Keeping completely up to date with regulation about Allergen’s.

* Maintaining the 5-star EHO scores on the doors.

* Any other reasonable duties as requested by the General Manager.

This is a full-time, permanent position, offering a salary of £35,000 to £40,000 per annum, plus live-in accommodation if required.
