MOBILISATION AND DEVELOPMENT CHEF
Permanent/Full Time – 40 hours per week (5/7 days)
Salary – £50k (target 10% bonus)
We are currently looking for an experienced and dynamic Mobilisation and Development Chef to join our team in South Kensington
Purpose of the Post
To take the lead in developing and executing new food concepts, re-branding and mobilisation of a new outlet and produce consistently high quality and inspiring food within gross profit percentages. To plan and co-ordinate the kitchen team to ensure the provision of an effective and efficient service. To conduct duties of the role in accordance with health and hygiene legislation and procedures. Training, mentoring and developing members of the kitchen team.
The post holder will lead the development of culinary initiatives that contribute to the growth and overall strategic management and leadership of the entirety of creative cuisine delivered.
In addition, the post holder will ensure all operations meet and totally comply with statutory requirements of Health and Safety, Food Safety and environmental legislation and procedures.
Key Responsibilities
* To manage the development of products and menus targeted to a range of price points and chilled pre-packaged food as well as tailoring them to the skill sets available to deliver them.
* To be dynamically involved in menu development and food presentation and ensuring that updated and accurate costing of all dishes and products are prepared and maintained, followed and updated in the FnB system.
* Develop new ideas to refresh the food offering to maximise opportunities. Demonstrate the ability to come up with creative ideas in line with current and future food trends and translate them to exciting and appealing menu and food offers.
* Perform audits to ensure total compliance across all food operations with statutory requirements of Health and Safety, Food Safety and environmental legislation and procedures including associated reporting and managing all onsite visits by the Environmental Health Office Council.
* The counting of stock and analysing of variances.
* To promote and encourage environmental improvement initiatives, as appropriate within the business.
* To act as an ambassador for the business and equal opportunities ensuring that the team acts in accordance with all policies and procedures.
Requirements
Candidates/post holder will be expected to demonstrate the following;
* Mobilisation experience
* Experience in food development concepts
* NVQ 3 / BTEC / City & Guilds / HND / Degree or equivalent experience
* Level 3 Food Safety
* Experience in catering / kitchen management, high volume and multi-site
* An experienced creative approach to developing a catering service, specifically in accordance with new food concepts, seasonal and food trends
* Work experience in a position such as Head Chef
* A complete understanding of the importance of health and safety at work and associated regulations / legislation requirements
* Excellent communicator at all levels
* Confident in facilitating training
* Excellent time management, organisational and planning skills, in order to deal with a range of operational matters within given deadlines
* A flexible approach to working, sufficient to be able to work a 5/7 days per week arrangement, work evenings and weekends as reasonably requested
* Someone who is looking to make a stand as a senior member of the management team
