Professional subscriptions Catering partner, Levy UK, are you looking for a Kitchen Operations Manager to join the team at Twickeham Stadium!

JOB PURPOSE:

To take responsibility for the management and administration of the kitchen operation and control procedures at Twickenham Stadium and all associated events whilst complying with company standards, policies and procedures always. Duties include maintaining supplier communications, goods received, distribution, labour control, waste recording, allergen and calorie information.

ACCOUNTABILITIES:

Operational
Responsible for managing the kitchen labour processes, procedures and operational controls that protect value to the customer, client and Twickenham Experience Ltd.
Establishes and maintains recipe and specification standards for all menu content.
Continually benchmarks the food production, costs and service with guests and analyses food trends within the marketplace, incorporating feedback and research into menu development.
Takes a structured approach to the management of the food purchasing and production and service for Twickenham Experience Ltd
Remains receptive to innovative ideas and pursues them in a positive manner.
To Operate Compass and TEL systems including but not limited to, Source, Klimato and Menu Guide.
Writing recipes/Specifications based on tastings and chef notes
Review menus content, Source seasonal ingredients and supply chain in accordance with Compass recommendations
Carry out any reasonable adhoc request or duty instructed by Exec and Head chefs. Financial
Delivers culinary standards to build top line sales.
Effectively manage costs within the department, in line with pre-determined budgets and current sales/business mix.
Provides financial analysis on all food and kitchen costs, menu mix objectives.
Makes personal recommendations based on knowledge and experience to improve products and service.
Taking responsibility in food and stock orders, keeping in line with pre-set budgets
Recording of food waste and assisting in strategies to significantly reduce it to set targets Management
Manage and motivate both direct and indirect reports, providing clear direction and guidance to all team members.
Carry out performance reviews to direct reports as required, identifying training requirements and development opportunities within the team.
Assist in managing relationships and liaise with representatives from the RFU, RFU Sponsors, Compass Group at Twickenham Stadium and any 3rd party suppliers. Security / Stock Control
Ensure understanding, awareness and compliance with all of the Company's security, stock control, loss prevention and key holder procedures, understanding accountability and consequences. Customer Service

Hours of work will be determined by the needs of the business and subject to the Working Time Directive and any Workforce agreement that is in place. This will involve some evening and weekend working. Who we are:
