CFC consults are on the lookout for a Sous Chef located in or on the outskirts of Reading for a hotel based in Swallowfield. Located on the beautiful gardens by the riverside the hotel is a luxurious Georgian build refurbished to modern standards while keeping its heritage in check a true jewel of reading.
Reporting to: Head Chef
Duties
Ensure all food and drink meets budgeted targets.
Work closely with the Head Chef to monitor stock movement, to ensure stock security and to adjust prices where necessary to ensure correct margins are met.
Ensure that billing and control of revenues are always maintained.
Safeguard profit through control of expenditure, wastage, purchases, and damages.
PEOPLE
Provide training and development for all kitchen employees.
Develop a close working relationship with all departments, colleagues, and other managers to ensure guest expectations are met.
Ensure the development of all employees within the department to continue to deliver and improve upon the service we offer.
Ensure that all training activity is recorded and evaluated.
Ensure that the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct of restaurant employees is maintained by your team.
SERVICE & PRODUCTS
Run the kitchen in the absence of Head Chef, lead by example and effective communication.
Sous Chef responsible for working with the Head Chef to create new dishes that are relevant to the restaurant’s style and customers’ expectations.
Ensure knowledge of product, client relationships and services are maintained and communicated to all relevant personnel.
Evaluate performance and product on a regular basis to recognise challenges for the future.
Maintain levels of service that consistently exceed the expectations of our guests.
Understand the importance of temperature, cleanliness, and language in the department to ensure the correct ambience is always maintained, and to always work to the Standard Operational Procedures.
GENERAL
Ensure you are conversant with, and ensure all employees understand:
The Fire Procedures.
The Security Procedures.
The Company Complaints Handling Procedure.
The facilities.
The Health and Safety Policy and Procedures.
Current licensing regulations.
Work to the vision of the organization.
Ensure that all statutory regulations are observed, and that the department complies with these requirements.
Comply with all policies and procedures as written in the company handbook.
